The curing process is where green vanilla pods transform into the dark, aromatic beans we know and love. It’s a labour-intensive process that takes 3 to 6 months.
The journey begins with “killing” — briefly blanching the green pods in hot water. Then comes the heart of curing: daily cycles of sweating in the sun and resting in blankets. This process develops over 200 flavour compounds that give vanilla its complex taste.
