Vanilla is one of the most labor-intensive crops in the world. Every single bean you receive from Organic Valley has been touched by human hands at every step of its journey.
Hand Pollination
Vanilla orchids bloom for just a few hours each morning. Each flower must be pollinated by hand using a small stick or thorn — a technique perfected over generations. In India, this happens between October and February in the Western Ghats region.
Harvesting
After 9 months of growth, the green vanilla pods are harvested by hand when they reach full maturity. Timing is critical — harvesting too early or too late affects the final flavor. Our experienced farmers know exactly when each pod is ready.
Curing & Sun Drying
The curing process transforms green, odorless pods into the aromatic brown beans we all know. Beans are blanched in hot water, then spread out to sun-dry for weeks. This slow, natural process develops the vanillin and over 200 other flavor compounds that give real vanilla its complexity.
Sorting & Processing
Once fully cured, every bean is hand-sorted and graded for quality. We check for aroma, moisture content, flexibility, and vanillin levels. Only beans that meet our standards are selected. From here, they’re transformed into extracts, powders, pastes, and sugars.
Packing & Delivery
In our hygienic packing facility, trained staff carefully weigh, pack, and seal every product. We ship across India via BlueDart and DTDC, ensuring your vanilla arrives fresh and aromatic — typically within 3-5 business days.
