Keep your vanilla fresh and aromatic for years with these simple tips

Real vanilla is a precious ingredient, and storing it properly ensures you get the most out of every purchase. Here is everything you need to know about keeping your vanilla in perfect condition.

Vanilla Beans

Whole vanilla beans need the most careful storage. Wrap them individually in wax paper or parchment paper, then place them in an airtight container or zip-lock bag. Store in a cool, dark place at room temperature (20-25°C). Never refrigerate or freeze vanilla beans — the cold causes the natural oils to crystallize and the beans to dry out and become brittle. Properly stored, vanilla beans last 12-24 months.

Pro tip: If your beans develop white crystals on the surface, do not worry — those are vanillin crystals, a sign of high quality, not mold!

Vanilla Extract

Extract is the easiest to store. Keep the bottle tightly sealed in a cool, dark cabinet away from direct sunlight and heat. Vanilla extract actually improves with age, like wine. It has an indefinite shelf life if stored properly, though we recommend using within 24 months for best flavor.

Vanilla Powder

Store in an airtight container in a cool, dry place. Keep away from moisture — powder can clump if exposed to humidity. A sealed jar in your spice cabinet is perfect. Lasts 12-24 months.

Vanilla Paste

Keep the jar tightly sealed after each use. Store in a cool, dark place. Once opened, use within 12 months for best quality. Ensure no water gets into the jar.

Vanilla Sugar

Store exactly like regular sugar — in a sealed container in a dry place. The vanilla flavor will actually intensify over the first few weeks as the sugar absorbs more of the vanilla oils.

Storage Dos and Don’ts

DO: Store in airtight containers, keep at room temperature, keep away from sunlight, use clean and dry utensils

DON’T: Refrigerate or freeze beans, expose to moisture, store near heat sources (stove, oven), leave containers open
